Paneang Curry

While we were away we spent our last day doing a cooking class. After we met with the monk in the morning! Anyway.. we cooked Tom Yam Goong, Phad Thai & Paneang Curry. My favourite was definately the curry and despite eating thai food 3 times a day for 2 straight weeks I still can't get enough! Here is the recipe!

Ingredients:

Panaeng curry paste - 10g

Shrimp paste - 2 g

Coconut milk (fresh if possible) 100g

Chicken stock - 30g

Vegetable oil - 20g

Kaffir lime leaves julienne - 2g

Red Chilli julienne - 3g

Fish sauce - 1tbsp

Sugar (palm sugar if possible) 1tsp

Salt

Method:

1. Heat vegetable oil, add panaeng curry paste and shrimp paste and stir for 3 minutes until the curry paste is fragrant

2. Add the pork or chicken or beef and stir for 4 minutes until well mixed

3. Add the chicken stock

4. When the stock boils, add coconut milk and boil for 3 minutes until bubbling

5. Add kaffir lime leaves and red chilli and season with fish sauce, salt and sugar to taste

6. Pour into a bowl and garnish with kaffir lime leaves and red chilli

Koh Racha

Our first stop in Thailand was a small island called Koh Racha off Phuket. The hotel is one of only a few on the island and it sure was luxury! We had our own pool which has a view down to the bay as well as an outdoor shower and many other cool features. We were able to explore the island by quad bike, snorkel and basically just relax! Our kyaking adventure was less successful and I don't think we will be 'tandem' kyaking again!!

I am really struggling to re-adjust to being back home in the cold Melbourne weather so am working out some new goals for myself to keep motivated and make life a little bit more exciting/challenging!

After a little bit of retail therapy I headed off for my first run back. It was going well thanks to a lovely tail wind and a I managed an hour of walk/run so I am feeling good!

In and effort to get myself back into a good fitness routine I am going to try and get back into my running. One of my best methods of motivation is either reading running magazines or hanging out with my old triathlon buddies! So I am going to make a pact with myself to run every day and get myself back to the point where I can go for a nice long slow run! Wish me luck! I will keep a dairy on my blog to track how I go!

I am seriously hanging out for our trip to Thailand. Can't wait for some relaxation and a break from work!!

One of the hotels we are staying at in Krabi is located with a view across to the Hong Islands which we plan to explore by kayak!

So apart from working flat out - I have been trying lots of new cooking creations as well as another Jamie Oliver book - I am obsessed with his recipes. I have 3 custom wedding invitations on the go through my etsy shop so that is exciting.

Today we visited Jerry's Cafe in Elwood. I have been wanting to try it for approximately 5 years! The corn and dill pikelets with salmon was our first pick but unfortunately the pikelets had run out!! oh no - I was seriously nearly crying. So I had the caramelised banana porridge. Hmm not the best ever. Anyway this weekend I am going to make our own corn and dill pikelets with the salmon and maybe next time we try Jerry's they will have some left. So I thought it was about time to mention one of my favourite blogs. One of my old design school/triathlon friends, she is always posting amazing photos, great recipes and crafty goodness! One of her recent posts related to Jamie Olivers Ministry of Food book. I had been holding on to a book voucher since my birthday and put it to good use to get this book. The principle behind the book is to inspire people to get in the kitchen and create their own meals and share them with others. My cooking was in need of some help basically because I am time poor, and my *husband* is a better cook. So I am working on this now, reading all of the gourmet travellers I can get my hands on and preparing to cook up a storm. Tomorrow night we are having guests for dinner and preparing homemade pizza for entree, four cheese gnocchi with walnuts, and Jamies Mega Chocolate Fudge Cake for dessert! My etsy shop is going well with lots of fun international orders which is great! Not long now till the honeymoon and I can't wait to sit on a sunlounge with a Singha in hand!

Gosh I love Mondays - not! We had our first day off in ages yesterday and boy it was nice to sleep in. Then off to our favourite brekky spot for some corn fritters and french toast yum! Then we went to my new brother in laws place for some lasagna and gardening! I am feeling slightly refreshed. Still waiting on the professional shots - I can't wait. Also in the process of planning our honeymoon which is going to be fantastic. At the moment it looks like: fly into Phuket, then off to The Racha, Phi Phi Island, Krabi, Koh Lanta and Koh Yao Noi - sounds like a lot but it will be a lot of fun! More wedding posts to come I promise!

I have blogged quite a bit about Sia. I just LOVE her music! SO much of it is perfect for a wedding but also for cheering you up when you need it. This week I will be organising our wedding music. If I had my way it would be pretty much all Sia and Dave Matthews but I guess that won't cut it! It has to be a little bit offbeat though... any suggestions are more than welcome!

Huge thanks to my maid of honour and bridesmaids for a wonderful Hen's day despite crazy Melbourne weather everyone arrived in one piece. I will do a proper post when I grab some of the stunning photos!

Alice in Wonderland

Yesterday we got the chance to go and see Alice in Wonderland in 3D. Despite a cinema with lots of children I loved it! I wasn't sure how it was going to rate after some slightly dodgy review in the paper. But once Johnny Depp appeared on the screen the movie got awesome. Fantastic characters, actors and visuals. A bit light on in the 3D department but otherwise go see it!! Today is the Hens and the bucks day - hoping to avoid a headache tomorrow!! And P.S - 2 weeks today!

It is crazy time! We have 16 sleeps to go till the wedding!

Yesterday was my 30th birthday! We ate out in the morning at the Blue Dish in Highett - I loved my french toast with banana! Then for dinner we went to Taxi. This was a meal I had been planning for about a year! The food was fantastic but we had to agree - not the best meal we have ever had. I certainly enjoyed the sushi and sashimi platter and the tempura crab sushi. Perhaps after the wedding I will become a food blogger that way I can take photos and eat out lots!

We also had a chance to go and visit a florist named Paul Hyland. He was extremely helpful and reduced some of my stress by providing a quote that was half my first one! I am sure I will be 100% with the flowers he puts together! This Saturday is the Hens & Bucks - its going to be fun!

Yesterday we attended the wedding of friends Nicole and Richard. It was a beautiful day and fantastic venues. Nicole looked amazing! We were also able to meet our amazing photographer Andrew Maccoll and after seeing some of the sneak peak shots from Nicole and Richard's we are SO excited!!! Here are a few shots from another one of his weddings - gorgeous! I have also been inspired to perhaps invest in a 'proper' camera - we will see!

Next week - oh my gosh is my 30th birthday. It has been a bit hard to organise anything with the wedding coming up but we are planning to visit Melbourne restaurant Taxi for dinner next week - I can't wait! Everything else is coming together nicely although it is coming around so quickly. I have a giant "to do" list next to me but looking forward to checking it off. HTB has a "it will be fine" attitude - which is great for him!! Anyway!! Hair trial was last night and makeup trial with the lovely Ella tomorrow night.

Our flower quote came through yesterday and HTB almost died. I am going back to the idea of DIY flowers. I know it is more work but I think it will be great to DIY them. We did a trial run yesterday and it's actually easier than I had expected. Need to do a little bit more research and a few trial runs to make sure I am happy with the results! I just wish peonies were in season.

It is 4 weeks today! I am a mix of excited and "oh my god". But no, its ok! I am picking up my fitness routine and doing some serious aerobics with more riding and running. I have a list of things to cross of which I need to just keep crossing off. Plenty of guests sending through RSVP's which I love. Tonight I have the Hens of on old friend Nicole - what we are doing is a surprise to everyone including the guests. Also the joint 30th of Kate & Luke. Then tomorrow it is the christening of gorgeous Ethan. And just because here is a photo from one of my favourite weddings of all time photographed by Jose Villa.

So it all seems to be coming together although I have had a few small panic attacks lately! The wedding invitations went out and I was so happy with the print job. So yesterday was not such a great day. I rocked up to the hairdresser to be told that our hairdresser for the day Sally had left the salon - but no-one told me this earlier! I got the colour done anyway but now I am looking for a hairdresser for 6 weeks time! Spending some time today doing organising bits and pieces and currently printing out the envelopes so that when the invites come I can send them straight away. Hoping I have everything under control! Ok this may be my longest blog post ever - but lots of things are working out tonight! Firstly I went to Officeworks and found my envelopes - after making the guy climb a ladder to get down the C6 envelopes that weren't orange, yellow or black (not joking!) Anyway so that is done and now I can print the invitations! YAY. Then I was chatting to Nancy on twitter then clicked on to her blog:sohappitogether. Nancy runs an event design and coordination company. Anyway one of her posts mentioned a singer named Ingrid Michaelson - who I must admit I have never heard of but her song - "little romance" sounded so perfect for a 'first dance' song - here are the lyrics (although my HTB does have hair!):

Among a few other things left to do I need to organise my wedding flowers. I have been a little reluctant to do this because I know it is another expense. At the same time I have seen plenty of photos of amazing bouquets. I am not sure what varieties of flowers I will use but they will hopefully be something along these lines. On Sunday we met up with our wedding celebrant - an old friend of my Mum. She was fantastic and has already sent through a first draft of the wedding which is looking great already! Lately I had heard a few whispers about something called FebFast which I assumed was just like dry July - a bit of a fun idea. Then I saw some more twitters about it and went to the website to find that this is an organised event which allows people to take a month of alcohol to raise money for drug and alcohol awareness. It had been on my mind a little that alcohol is really not so good for you and with the wedding coming up this seems like a great way to refresh myself, lose a few kilos and save a few dollars. Thanks to Sarah Wilson who is the ambassador for inspiring me to get involved - love her blog too! So I am starting my FebFast today - one day early because my friend Nicole is getting married at the end of February at the Circa so I think a drink will be in order to celebrate. I will keep you all updated! More wedding related posts to come - I promise!

Tour Down Under

We also travelled to Adelaide for the Tour Down Under. The 8+ hour drive was not so much fun but the tour was very exciting. A particular highlight for me was seeing Lance Armstrong up close! We also managed to get a signature (through the help of a very kind and generous man) signed on a Livestrong jersey for my Dad. We loved the country feel of the city of Adelaide and a lovely Tapas meal at the end of the stay.

So last night we counted down and we are at 10.5 weeks to go till the wedding day so today I am in panic mode. I need to do so many things! I just ordered a wedding name change kit and now I am in the process of getting as many things done as I can but I just don't know where to start!!

Tomorrow we meet with the celebrant so I can lock in a time and get the invitations printed - I will post the design so you can check it out!!

Last week I ordered these hair pieces for our hair from Little White Dresser on etsy (LOVE her shop!). Mine will be the white one and the bridesmaids will have the coloured ones in a dusky pink - can't wait till they come. Any wedding planning tips would be gladly appreciated!

So it is sweltering hot in Melbourne but I am very excited to bring you this feature wedding photographed by Nikole Ramsay - another twitter pal - based in London but from Melbourne! This wedding caught my attention because of the nice simple style and the fact that it was held in a garden. The photos are so lovely and I just love the setting - simply beautiful! This wedding is also in the December issue of Cosmo bride if you want to see more! Love the shot of Fiona in her gumboots. The bride and groom - Fiona & Izy held their wedding in Fiona's parents garden - an intimate and clearly stylish wedding. Love it! Exactly the reason I am having a daytime wedding!!

Black Bridesmaids dresses

So - for my wedding we have chosen black bridesmaids dresses. I didn't think we would go with black but in the end it worked out to be more like a 'neutral' colour and now I can work everything else around it. Plus the girls looked fantastic in the dresses! They are lovely and floaty and I plan to use coloured sashes or flowers with them!

paper lanterns

I think I am finally getting somewhere!! I have decided not to be so structured with my colour palette and just work with a range of colours! I have ordered some paper lanterns on ebay in light pink, bright pink and light peach to go with the white ones I already have! we will see how this all turns out! I have completely gone off the light green idea!

Etsy wedding sashes/flowers

I have been doing some etsy shopping and have come across some great etsy shops with fantastic belts/sashes that incorporate fabric flowers to wear with the bridesmaids dresses! Now I just need to work out which will suit my whole look the best and decide on my colours once and for all!

The Sash

Ever since we got engaged I have seen heaps of wedding dresses with lovely sashes. My wedding dress can be worn with a sash but I am not sure yet if I will go down this path. However for the bridesmaids dresses I think the sash is the perfect addition to their dresses - I just have to decide on a colour and whether they should be the same colour or not?

Star of Greece

Next month we are going on a little bit of a family holiday and checking out the Tour Down Under in South Australia and hopefully catching up with Lance Armstrong. We decided to try our luck and managed to get a table at the Star of Greece Restaurant in Port Willunga which The Tour passes by! Very exited as I have been there one day for a work xmas party but it was so rainy so I can't wait to check it out on a beautiful day! Hope everyone had a great weekend :)

It has been a while since I featured another etsy seller because I have been focussing on my wedding planning. I am in the process of designing my wedding invitations which has been a long process for me because I keep changing my mind! I love these invitations from Golden Hill Design because they have so much personality! I will do a post shortly to show you where I am upto with my invitations. I feel like I have so much to do!!!!!! Also need to find a hairdresser for the day!!

Bridesmaids Dresses

I am starting to have a small panic attack about finding bridesmaids dresses. One problem I have is finding time to go and look but I also want something that is not too mainstream so I need to find some great shops in Melbourne where the dresses don't cost a fortune. I am doing some searching online and hopefully there will be an expedition next weekend. In the meantime I will post some ideas and see what you all think!!

Mondays can be so tough! I have been working on some custom orders today which is great fun - here is a sneak peak although the designs won't be finalised until tomorrow. I have also made a resolution with myself to give up drinking alcohol. For now this will be for one month - so until the 23rd of December. There are a few reasons for this - one being for my health, one being so I can get nice and trim before my wedding in 4 months time and also because I think it will positively effect my life in other ways! So I will be using you guys as my honesty system and if I break my pact I promise to post here and let you know!!

Ripponlea Estate

Yesterday we attended our friends wedding atRipponlea Estate. I have to say it was such a great day and an amazing venue. Even though it was raining the beautiful gardens and the amazing mansion were stunning. The catering by Peter Rowland was also a highlight. I had to buy a new pair of Tony Bianco shoes for the occasion although silver satin shoes and rain don't go too well!

I have been working on some custom orders in my etsy shop and thought this one was a great combination of two of my designs. I am in the process of designing my own invitation but just waiting to select the bridesmaids dress so I can match the colours. Only problem is I am so picky I can never choose one that I absolutely love! Not much else to report - still so hot in Melbourne but I guess I can't complain!!

DIY wedding bouquet

So I have been doing some research and I am seriously considering making my own wedding bouquet. It is not so much the cost of having one made it is more the fact that this way I can make it exactly the way I want! Our wedding is going to be a little bit rustic so I figure if some of the flowers are a bit 'wonky' it won't be such a bad thing. I came across this post on DesignSponge - (great blog!) which has really inspired me. The only thing will be making sure I have time the day before and making sure it won't stress me out!!

To bouquet or not to bouquet

I have been having some wedding dilemmas... mainly in my head and mainly based around my colour palette, my exact wedding style and also my wedding flowers. I am not sure if a bouquet fits with my wedding style but I also feel I need to have something in my hands when I arrive. Here are some flowers I have come across that I like - what do you guys think? Something structured or something casual? In the garden

So nice to finally see the sun - and now it is boiling hot. So we spent some time in our garden looking after the herbs and tomato plants! The exercise is going better - went for a great ride this morning and planning for lots more.

I have been so busy lately I haven't had a lot of time to post on my blog. So here is a quick update. I have been working really flat out lately and my exercise program got thrown out the window. So this morning I got up nice and early and did my 40 min run/walk - it seems as though my body has forgotten what to do but I am feeling so motivated now! Planning to ride tomorrow morning so will post afterwards! All the wedding planning is going well - kind of on hold which is nice! Today I am off to the hairdresser - cant wait. Then lots of errands to run and babysitting my little nephew tonight! Lots of orders and enquiries coming through my etsy shop so I am really excited about that! Think thats about it - thanks for all your lovely comments!!
